Teriyaki Lettuce Wraps

Ingredients:

1 pound ground turkey

lettuce hearts
-
1/3 cup shredded carrots
-
1/2 white onion
-
3 scallions

2-3 garlic cloves

1/2 cup teriyaki sauce

2 tbsps sesame seeds
-
1 tbsp garlic powder
-
1 tbsp onion powder
-
1 tbsp olive oil
-
hoisin sauce (Optional)

Prep Ingredients

Wash the lettuce thoroughly and gently pat it dry with a paper towel.

Chop approximately 1/4 cup of scallions, separating the white parts from the green.

Finely dice half an onion and set it aside for later use.

Heat about a tablespoon of olive oil in a skillet over medium heat.

Peel and finely mince 2-3 cloves of garlic, then add them to the skillet. (Alternatively, minced ginger can be used as a substitute for garlic, if desired.)

After the garlic (or ginger) becomes fragrant, add in white onions and a tablespoon of sesame seeds.

Stir regularly for 1-2 minutes or until the sesame seeds seem toasted and the onions begin to soften.

Ground Turkey

In a skillet over medium heat, add the entire package of ground turkey and break it apart with a wooden spoon.

Season the turkey with garlic powder and onion powder, using about 1 tablespoon of each.

Let the turkey cook for approximately 6 minutes, then increase the heat to high.

Pour in your favorite Teriyaki sauce, preferably one labeled "cooking" on the bottle.

Once the sauce has been fully absorbed, add in the whites of the scallions and the shredded carrots.

Stir the ingredients together until the carrots begin to soften and become more pliable.

Reduce the heat to a simmer and allow the mixture to thicken slightly while you prepare your plate.
​*If you are against cooked carrots, you can add them in after the 5th step of this section instead. I chose to cook my carrots because this allows your body to absorb beta-carotene significantly better. (Beta-carotene converts to Vitamin A in the body)

Assemble & Enjoy

Scoop the ground turkey onto your lettuce hearts.

Garnish with sesame seeds, hoisin sauce, and remaining scallions.
