One-Pot Creamy Fettuccine

Serves: 3

Ingredients:

  • 8 oz Fettuccine 

  • 3 cups Chicken broth

  • 1/2 cup Heavy cream

  • 1 cup Freshly grated parmesan cheese

  • 1 tbsp Olive oil

  • 4 Garlic cloves minced

  • 1 tbsp Garlic powder

  • 1 tbsp Onion powder

  • 1 tsp Oregano

  • 1.5 tsp Red pepper flakes

  • .5 tsp Dried parsley

optional garnish: fresh parsley 

My one-pot creamy fettuccine pasta recipe is both quick and easy to prepare. Taking just around 20 minutes to make, it offers a satisfying and filling meal. This is perfect for those new to cooking or anyone seeking a hassle-free dish!

Boil pasta

  1. Saute 4 cloves of minced garlic in 1t bsp olive oil in a large saucepan or pot on medium-high heat.

  2. Once fragrant, add 8 oz of fettuccine noodles.

  3. Pour 3 cups of chicken broth into the pot. The noodles should not be fully submerged in the broth. 

  4. Bring to a boil and cover. Stir regularly to ensure the noodles all go under at some point.

  5. Cook until al-dente. For me, this took about 10 minutes.

Season

  1. Bring the heat down to medium-low and let the noodles soak up the broth. If necessary, you can pour some broth out at this step. 

  2. Add 1/2 cup heavy cream and stir. Let simmer for about 1-2 minutes to thicken.

  3. Add in 1 tbsp garlic powder, 1 tbsp onion powder, 1.5 tsp red pepper flakes, 1 tsp oregano, and .5 tsp dried parsley.

Cheese

  1. Bring heat down to a simmer and slowly add 1 cup of freshly shredded parmesan cheese. It's crucial to avoid pre-grated parmesan cheese as it significantly impacts the taste. My go-to for when I don't want to grate my own cheese is the Italian blend shredded cheese found at any Kroger. hdhshshsHowever, this will still 

  2. Stir continuously, adding small amounts of cheese at a time (high heat plus a lot of cheese causes clumping).
