Salt a pot of water and bring to a rolling boil.

Add in your bow-tie pasta.

Cook until al-dente
-
Do not pour all your pasta water out. Scoop the pasta directly into the sauce on step 04, or keep a cup of pasta water in a separate bowl.

-
Heat olive oil in a large sauce pan on medium-high heat
-
Add in 2 cloves of minced garlic and stir until fragrant.
-
Once fragrant, add in half a red onion, diced.

Sauté for 2 minutes.

*Reminder of your sauce ingredients:

04
Combine
-
When bowtie pasta is cooked al dente, toss it into the sauce.
-
Mix together the sauce and pasta. Add seasonings to taste. (I found that adding more salt at this step enhanced the flavor)
-
Add 1/4 a cup of pasta water (or as much as necessary) to help the sauce have a smoother consistency.
05
Mix!
-
Lower the heat to a simmer.
-
Add in small portions at a time of parmesan, mozzarella or my favorite, Italian blend cheese.
-
Stir, and continue until you reach your ideal level of cheesiness.
06
Plate
Serve on its own, or add fresh parsley and a dash of oregano for garnish.
